Very good version of Schlotzsky's Bread

Dissolve 1 tablespoon sugar in 1/2 cup warm water then add 2 1/4 teaspoons active dry yeast and let sit for about 10 minutes.

Meanwhile dissolve 1/4 teaspoon baking soda in 1 1/2 cups warm water in separate bowl. Add 3/4 cup warm milk, 1/2 teaspoon salt and 1 cup flour. Beat with a wire whisk until smooth. Add the yeast mixture and whisk until smooth. Add 1 1/2 cups more flour and stir with a wooden spoon until well mixed. It will be thick and sticky, not like regular bread dough.

Spray two 8 or 9 inch pie pans with cooking spray and dust lightly with cornmeal.

Put half the dough in each pan. It will spread out while it rises. Cover and let rise for about an hour.

Bake in preheated 375 degree oven for about twenty minutes. Let cool for 5 minutes then remove from pans to a cooling rack. Slice horizontally after completely cooled. Each "loaf" makes one jumbo sandwich that can be cut into four small quarter round sandwiches.
