Someone asked for my easy peasy recipes so here they are!

CHICKEN DIVAN

2 pkg frozen broccoli florets (12 oz) or fresh is you prefer (cook al dente)
4 cups sliced cooked (skinless, boneless) chicken breast
3 cans of cream of chicken soup (I use Campbell's healthy request)
1 cup mayo (I use light mayo)
1 1/2 teas. lemon juice
3/4 to 1 cup shredded cheddar cheese

Combine soup, mayo and juice.
Layer in a 9 x 13 baking dish: cooked broccoli, chicken, soup mixture and sprinkle with shredded cheese on top.
Bake in 350 degree preheated oven for 30 to 35 minutes until hot (uncovered).

Serving size for 4-5 people I use the following:
16 oz chicken
1 can of soup plus 1/2 cup milk
reduce mayo to 1/2 cup
use amount of cheese you like (1/2 to 1 cup)
I bake this in a round glass 2 quart baking dish.
same about of time and temp

Can be made ahead (like a day or two) but remember to remove from fridge about an hour before baking.
Don't use fat free or low fat cheese as it doesn't melt! (unless you like a "crust" top) lol

CHICKEN A LA LEONARDO

24 ounce skinless boneless chicken breast (cut into serving size pieces after washing and patting dry)
2 cans creat of chicken soup (I use healthy request soup)
1/2 cup dry vermouth (alcohol cooks off during baking)
10 slices of swiss cheese
3 cups (or 5 ounces) of croutons crushed (if you can get onion/garlic croutons kudos for you!)
add some minded garlic or onion powder if you can't get onion/garlic croutons

Combine soup and vermouth. (sometimes I add 1/2 cup of skim milk to make the sauce a little "juicier")
Layer in 9 x 13 inch baking dish in this order: chicken (raw), soup mixture, lay cheese slices on top so to cover dish as much as possible, layer crushed croutons on top of cheese.

Bake in preheated 350 degree oven for one hour. I usually serve this with "yolkless" egg noodles, a veggie and fresh fruit sides.
May make the day before if desired. Remove from fridge an hour before baking if you make it ahea

OOPS...forgot to say to reduce the broccoli florets to ONE 12 ounce package for the smaller size!
