PASTA TERESA
This is a favorite pasta dish I make at least 3x a month. Its a fast, easy and nutritionaly sound meal!
the ingredients are... 1 bulb..not clove..garlic chopped
small-med. onion chopped
olive oil....bout1/4cup or little less
fresh broccli..2cups slighty chopped
pasta..i like cut ziti..1lb
salt,pepper
good romano cheese (grated)
cook pasta in heavely salted boiling water in large pot.. until 1/2 cooked ...just starting to be limp.....then add fresh chopped brocclie..continue boiling and stirring till pasta is done..brocclie should be done by this time.. drain in strainer..now in same pot add olive oil (I use xtra virgin)...get oil hot and add chopped garlic and onion..saute till almost browned then add pasta/brocclie mix and keep stirring...its ok if brocclie breaks up a bit ..in fact break it up some!!! add a little more oil if it seems a little dry cause the pasta will absorbe some of the oil..sometimes i add a little butter at this point to give it a slight creamy texture...add freshly grated cheese,pepper and salt to taste..you can add stuff like cooked chicken pieces or cooked shrimp at this point or its great by its self... I add tons o romano!!! ENJOY!! P.S. you can add more or less pasta or brocclie,onion,garlic whatever have fun wth it!
