Easy Cheese spread / dip
This is a childhood fav. I dont really measure unless im forced to... so these are averages, adjust to suit, cant really go too wrong.
2-3 cups of FINELY grated cheese
1/4 - 1/2 cup skimmed milk (or evaporated for richer spread)
1/2 tsp finely grated onion
couple turns of freshly ground black pepper
couple dashes of hot sauce (optional)
1 tsp condensed milk
couple drops of green food coloring (yes GREEN )
Method:
Combine grated cheese, onion, black pepper. Smush it together real good, till its almost like a weird looking cheese dough.
Then add milk and give a lil whip. The more milk u add, the lighter and fluffier it gets. Add too much, it will get runny and weird, so just add in small quantities till it gets to the consistency you prefer.
Now the condensed milk is whats really diff about this one. Its an old trick I learned from a caterer at a wake. Id start off adding a drop at a time, and adjust to your taste. What it does is tone down the onion a lil bit and gives it a nice slightly sweet taste. You can leave this out if u dont care for it. I like it tho.
Then stir in your hot sauce and a drop or two of food coloring, and there ya have it.
