Dressing for fresh fruit
Well since no one commented on the "squash" dressing....here I go with a different type dressing. Fresh fruit is good and good for you, but sometimes we like to add a little something to it.
You will need 4 egg yolks, 1/3 cup sugar, juice of 1 grapefruit, dash of salt
Mix together in top of double boiler. Place over boiling water...do not let bottom of pan touch water....you want the steam to cook the egg yolks. Beat constantly while mixture cooks. Doesn't take but a few minutes. Just when mixture begins to thicken a little, remove from heat. Let cool.....drizzle over your fruit.

ok well here in the caribbean we make this thing called chow (not the doggy kind )
So for example, if u wanted to make Pineapple Chow, you can do this:
Take canned pineapples, drained , or freshly sliced pineapples and add to it a couple pinches of salt, some freshly ground black pepper, lil crushed garlic, and if u want, some finely chopped cilantro, and if you are daring, a bit of crushed hot pepper or hot sauce. Give it a good stir, and let it sit for a few minutes. Its really quite good.
We do this with mangoes, papayas, apples, cucumbers, oranges, etc.
No cooking involved. The fruit doesnt even have to be ripened, tho it certainly can be if u like the sweeter versions , but as long as its just mature enough to not give u a tummy ache.

Here is one to put on your fresh fruit
1 large package of the COOK and serve vanilla pudding mix
2 cups of orange juice or so ( i never measure when i cook- I cook from the heart )
juice from 2 cans of chopped pineapples in 100% pineapple juice
put all ingredients into sauce pan.
let cook untill it starts to bubble and thicken
stir, stir, stir until it turns into a "sauce"
turn off heat and let completely cool
in a big bowl throw together
sliced strawberries, sliced bananas, melon, red grapes, blueberries and the chopped pineapple from the can.
Once your "fruit sauce " is completely cooled off, drizzle on fruit and mix in the bowl. mmmmmmmmmmmm good, I promise and healthy too!
