Anyone know how to make sorbet???
We are designing our own snack foods in cooking class and me and my partner are doing a berry sorbet, Changing round the toppings and playing with the flavours, but neither of us knows how to make sorbet. If anyone knows the basic sorbet recipe i would be very grateful. Thanks

I've never made sorbet.
But I googled it.
This is what i came up with
Raspberry Fruit Sorbet
Ingredients:
*2/3 cup of superfine sugar
*1 cup of water
*Puree 23 oz. raspberries with 1/4 cup lime juice.
Instructions:
1) Combine sugar and water in a medium sized saucepan.
2) Stir slowly over low heat until sugar is dissolved.
3) Bring mixture to a boil.
4) Boil for 1 minute.
5) Remove from heat and cool completely.
6) Mix the fruit puree in a food processor or blender.
7) Add the raspberry puree to the cooled sugar syrup and stir to combine.
8) Place the puree/sugar mixture into an ice-cream maker and freeze according to manufacturer's instructions.
If you do not have an ice cream maker, here is an alternative way to freeze the sorbet.
Place the puree/sugar syrup in a metal bowl or cake pan and freeze for 1 hour. Remove from freezer and beat with an electric mixer or whisk; return to the freezer. Repeat at hourly intervals 3 more times.
*Note: I've never made this so I don't know if the recipe works. Maybe someone else has made sorbet before and will help you out.
I think you can just switch the raspberries for what ever fruit you want.

Citrus Sorbet
This is a "Little Guy" Fave!!!
Ingredients
1 c Water
1/2 Sugar
1 1/4 c Orange Juice
1/4 c Lemon Juice
3 tbsp Lime Juice
Prepare
In a medium saucepan over high heat, combine water and sugar and bring this to a boil, stirring constantly until the sugar has dissolved, this creates a simple syrup. Remove the saucepan from heat and let stand until the syrup is just warm.
In a medium bowl, combine the syrup and the juices and stir until they are well blended.
Pour the mixture into an ice-cream maker. Following Manufacturers instructions for your model to freeze the sorbet. (or follow the alternate directions give by Pine )
though by third interval, it will likely be to hard to stir
Works well!! And is very refreshing when it is warm outside

1 c Water
1 c Sugar
1 tbsp Lemon Juice
Prepare
Place raspberries in food processor, or blender, and process or blend until they are pureed and smooth in consistency.
In a medium saucepan over high heat, combine the water and sugar and bring mixture to a boil, stirring constantly until the sugar has dissolved. Remove the saucepan from heat source and let stand until the syrup is just warm.
In a medium bowl, combine the syrup, raspberry puree, and lemon juice and stir until they are well blended.
Pour the mixture into an ice-cream maker. Follow manufacturers instructions to freeze the sorbet.

I shared two of the recipes I use but....
To answer your question regarding sorbet ....
You are basically flavoring syrup and freezing it...
Simple Syrup Recipe...
Equal Parts Sugar and Water.... so 1 cup each... 2 cups each...etc depending on how much you wish to make.
Then... to flavor,
You can really use any fruit that can be made into a puree.... best advice frozen because it has already been processed by par boiling, or blanching.
The sky's the limit Any fruit you can think of is pretty much fair game, so get creative! For a 1 cup simple syrup combo, you would use about a cup and a half of fruit.
Now, you will need to add a "thinner" to the puree mixture, Lemon or Lime juice work well.... it isn't an exact science, but generally a Tablespoon or two is enough.
