Squash Dressing
With many of our gardens beginning to produce yellow squash, here is a recipe my family enjoys.
SQUASH DRESSING
2 cups cooked squash (fresh does better than the canned squash)
stick oleo, melted
1 medium onion, chopped
2 cups crumbled cornbread
1 can cream of chicken soup (celery soup may be used instead)
Salt & pepper to taste
Grated cheese (to your liking)
Saute' the onion in the oleo for a few minutes.
Combine all ingredients, except the cheese, in casserole dish. Bake 30 to 40 minutes at 400 degrees.
About 5 minutes before cooking time is up, sprinkle the cheese over the top of the casserole; return to oven to allow cheese to melt.
