Food For Thought: Adapted Ironstone Signature Sandwich
Hello Everyone
God bless you this day.
The following recipe is one that my husband and I suspect (lol) is how a restaurant prepared their signature sandwich that we tried nearly 30 years ago. The restaurant no longer exists, but we have been making this sandwich ever since that taste experience so long ago. It's really different, and not one that everyone would care for, but is one that we enjoy a few times a year. This is an open-face sandwich.
The following represents ingredients for 2-4 servings -- depending how hungry you are.
4 slices Cinnamon Swirl bread lightly toasted (we have used cinnamon raisin bread when we can't find the other)
2-8 slices of bacon, cooked (you decide how much bacon. (Because of sodium restrictions, I only use 1.5 slices split between two open-face sandwiches)
4 slices (1/4 inch thick) tomatoes from a large tomato. Or more, if tomato is smaller
4 Large Lettuce leaves
4 Pineapple rings (canned or fresh). Save the juice if using canned in natural juice.
8 oz. sliced cooked chicken (or turkey) breast, divided
2-4 Tablespoons Crumbled Blue Cheese
Pineapple juice 4 Tablespoons
Toast the bread and cook the bacon.
Place a slice of toasted bread on plate and place leaf of lettuce on top, then stack the remaining ingredients: Bread, Lettuce leaf, Chicken/turkey slices, tomato slice, pineapple slice, cooked bacon, blue cheese crumbles, then drizzle 1 Tablespoon of pineapple juice over the top. Eat with knife and fork.
Note: If using fresh pineapple, you might want to purchase a small can/bottle of pure pineapple juice. We usually keep a few tiny little cans (6 oz.) of pineapple juice in our pantry -- good for other recipes, too.
Warning: it is messy.
If you try it, I hope you enjoy it.

[2Timothy 3:1-5, KJV] 1 This know also, that in the last days perilous times shall come. 2 For men shall be lovers of their own selves, covetous, boasters, proud, blasphemers, disobedient to parents, unthankful, unholy, 3 Without natural affection, trucebreakers, false accusers, incontinent, fierce, despisers of those that are good, 4 Traitors, heady, highminded, lovers of pleasures more than lovers of God; 5 Having a form of godliness, but denying the power thereof: from such turn away. ...
[2Timothy 3:13 KJV] But evil men and seducers shall wax worse and worse, deceiving, and being deceived.
[2Timothy 4:3 KJV] 3 For the time will come when they will not endure sound doctrine; but after their own lusts shall they heap to themselves teachers, having itching ears;
[2Peter 2:1 KJV] 1 But there were false prophets also among the people, even as there shall be false teachers among you, who privily shall bring in damnable heresies, even denying the Lord that bought them, and bring upon themselves swift destruction.
[2Peter 3:3 KJV] 3 Knowing this first, that there shall come in the last days scoffers, walking after their own lusts,
[Jude 1:16 KJV] 16 These are murmurers, complainers, walking after their own lusts; and their mouth speaketh great swelling [words], having men's persons in admiration because of advantage.

Oh my gosh.
I was glad to see the ‘eat with a knife and fork’, because I was imagining holding it over the sink.
It sounds wonderful, but can one person eat all that? (I’ve been eating vegetables too long!)
Kudos to you for remembering that recipe for so long, too.

Even though I've been trying to eat healthy for a several years now, I could compete with a sumo wrestler when it comes to eating if'n the opportunity ever presented itself. Although, I would have to pass on wearing the mawashi.

Sumo wrestler.
I am still baking bread....low sodium at that. I too have to watch the sodium, due to stage 4 renal failure....which isn’t as deathly as it sounds. I’m doing one-bag-a-day peritoneal dialysis, which I do at home, total it takes an hour of my day. The rest of the day I do my journal making, baking, and one day a week I cook supper for the local addiction recovery farm...a total of 6 people I think. I really love cooking still, which is good, because I have to cook everything from scratch. Low fat, low sodium, and low sugar...But for them I cook ‘normally’ haha. I bake my own bread, and share with my neighbors.
I manage to stay busy, but at home, they don’t recommend I get out too much. I do my cunday school class from home on Zoom, which is pretty nice.
I hope you’re well, your hubby too.

You have always been so clever at making things, and your bread baking skills always put me in awe. It is so wonderful that you still share your bread and that you are now cooking for that group. God has given you those blessed talents for a reason and you are serving Him well.
We could share recipes -- or should I say the Lowdown. I too eat low sodium, low sugar, low fat.
Hey, maybe the band "War" sang that song "Low Rider" after us.
Hubby and I snapped, blanched and froze 5 quart bags of green beans today. Our local grocery store was selling locally grown fresh green beans for 69 cents a pound, so we bought 6.75 pounds. The Farmer's Market was charging $4.00 for a container that held approximately 10 oz. of beans. I tried to support our local farmers as much as possible, but $4.00 for 10 oz. of green beans??? The remaining beans we cooked to have with dinner the next few nights.
Low ri der ...drives a little slower.

Mack, green beans! I love them.....raw. I love crunchy things, so I eat fresh green beans raw. Weird I know.
Don’t you feel great storing up beans? That’s a real accomplishment. Our farmers decided to give away produce they couldn’t sell, it was 3 Saturday’s in a row they did this. It was wonderful. Anyone could pick it up. Lettuce, radishes, grape tomatoes, baby potatoes, onions, baby carrots, apples, nectarines, plums etc.
Low rider...I haven’t heard that in ages, .
I love making my own tomato sauce. I make sauce out of red bell peppers, too. I have to watch my phosphorus, so the red pepper sauce in place of tomato is better for me. It’s sure tasty. I use it on homemade pizza dough....so I can have pizza. I use True Lemon packets in place of salt. I DO think we could rock a LowDown cookbook, .
I could talk cooking all day, haha.

While we were blanching, drying and freezing batches, I probably ate a couple cups of the raw beans. I also have a recipe for green beans that we make every week, because I like them any time of the day: breakfast, lunch, dinner or for snack.
Maybe I'll post that recipe next.
Your bell pepper sauce sounds awesome. I've made white pizza using a cauliflower sauce as a substitute for regular bechamel.
Wow, that is so awesome what those farmers did...free food, you can't beat that. Talk about allowing gleaning, they went one better and picked the vegetables for people. Hallelujah!!!
