Gingerbread Granola

This is such a tasty treat Had to share!
Ingredients
3 1/2 c Old Fashioned Oats
1/2 c uncooked Quinoa
1 1/2 c Chopped Pecans
2 tbsp. Extra Light Olive Oil
1/2 c Full Flavored Molasses
1 tsp. Pure Vanilla Extract
1 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/2 tsp. Ground Nutmeg
1/4 tsp. Salt
3/4 c Chopped Dried Cherries, Cranberries or Raisins
Instructions
Preheat Oven to 325*. Spray large baking sheet generously with cooking spray.
Combine oats, quinoa, and pecans in a large bowl, set aside. In a small bowl, whisk olive oil, molasses, vanilla, cinnamon, ginger, nutmeg and salt until blended. Pour molasses mixture over dry ingredients and stir until thoroughly coated. Spread mixture evenly onto prepared baking sheet; bake 20 minutes, tossing once halfway through until golden brown.
Remove from the oven and stir in cherries (cranberries or raisins). Allow to cool thoroughly on baking sheet. Transfer to an airtight container.
