Southern Peach Cobbler

Preheat oven to 350 degrees

Set aside a 13x9x2 baking dish

Ingredients:

1 stick butter ...not margarine (melted)
2 (16 oz.) cans sliced peaches
2 C sugar plus 1/4 C sugar (to mix with peaches in saucepan)
2 C self rising flour
2 C whole milk
2 t baking powder
½ t salt
1 t vanilla

Legend: C= Cup; t= teaspoon; T= Tablespoon

Directions:

Pour melted butter into large 13x9x2 pan, spread butter evenly on the bottom; then set aside.

Drain peaches, but reserve 1 C of juice.

In a sauce pan, add peaches, 1/4 C sugar and juice... just to a boil. Set aside.

In a mixing bowl, combine 2 C sugar, flour, milk, vanilla, baking powder and salt; mix well until blended.

Pour batter over butter into 13x9x2 baking dish. Spoon hot peaches on top of batter and pour the remaining juice over the peaches.

Bake uncovered for 40-50 minutes until golden brown. Serve hot with vanilla ice cream. Scrumptious!

WOW. Can I have mine with ice cream? Sounds wonderful.
