fresh corn soup
I'm a veggie lover and a soup nut. Here's something to do with leftover corn on the cob.
Fresh Corn Soup:
1 C water
2 C chicken broth
1 C thinly sliced or chopped bell pepper (I use red for color, but any will do)
1/2 C finely chopped white or yellow onion
1/2 diced carrot
3-4 ears of corn, cut corn off the cob
seasonings to taste...I add a Knorr vegetable soup seasoning square, and teaspoon salt, and 1 of pepper.
put chopped raw veggies in broth and bring to a simmer, simmer 2 min if you like a little 'stick' in you veggies, longer if you like them soft. Add the corn. If you'd like thes thickened a bit, mix a tablespoon of flour with a half cup of hot water til smooth, add to simmering soup. Turn off heat and add 1 cup of half and half, or milk.
