Thomas's Tilapia With Avocado and Tomato

4-6 Tilapia Filets thawed out
1 cup flour
1 cup buttermilk
1 cup instant potato flakes

Take Tilapia filets and place in a bowl with the buttermilk and let soak about 20 minutes in advance.

Add to the flour

1.5 teaspoons Lawry's seasoning salt
1 teaspoon Garlic powder
1 teaspoon Onion Powder
1 teaspoon Black pepper (Optional)

Take soaked filets from buttermilk coat well with flour then back into the buttermilk then into the potatoe flakes. Fry tilapia in hot pan in oil of your choice until golden brown and done.

Chutney ingredients

2 large tomato skin removed and diced.
1 very small onion minced fine
1 large ripe avocado
1 garlic clove minced
2 tablespoons balsamic vinegar or red wine vinegar
Large pinch of Kosher salt

Add all ingredients in bowl and toss gently.

Serve with Tilapia filets ... So good.


Wilted Spinach Salad

Ok so it's a secret recipe but I'll share.

Ingredients:

1 bag spinach (next to lettuce in store)
4 large bacon strips extra thick
Small onion minced
1 teaspoon finely minced fresh garlic
9 large fresh mushrooms sliced
½ cup Raspberry jelly no seeds
¼ cup red wine vinegar
1 tbsp. Honey

Ok, so get that bacon crispy save the stuff ... Ya the grease about 3 tbsp.

Add the onions and garlic.

Add washed spinach.

Sweat it in pan and add water 'til tender (3 Tablespoons).

In another pan add jelly, red wine vinegar and honey. Reduce a little.

Mix together.
