Food For Thought: Chick Pea Civiche
Hello Everyone
God bless you this day.
This recipe, Chick Pea Civiche" is one of my favorites to eat for lunch. The recipe is adapted from one by chef Marcela Valladolid, and she has shared it in one of her books: "Fiestas: Tidbits, Margaritas & More". I seldom follow a recipe completely, that is why I also give reference to the original chef, if I know it, and mention that I adapted it -- mostly because of health restrictions, etc. The following is how I make it, and it makes 3-4 servings -- depending on how generous a portion you prefer.
Mix together:
1 15.5 oz. can Goya Prime Premium Low Sodium Chick Peas (Garbanzo Beans), now with sea salt.
1/4 cup chopped Onion
1/2 medium Tomato, chopped
2/3 of a medium-size Zucchini, chopped
2 Tablespoons fresh lime juice
1 Jalapeno pepper, diced -- or 1/2 if it is really spicy. (if you like it spicier, use a serrano pepper)
1/8 tsp ground black pepper
4 Tbsp (1/4 cup) minced fresh cilantro. (if using dried...reduce to 1 Tbsp)
1/2 tsp Mrs. Dash Lemon Pepper
Toast 3-4 Corn Tortillas to make Tostadas. (I use a dry iron griddle via stove top -- no oil).
Top each tostada with 1/3 - 1/4 of the mixture, or just eat as a salad.
May be served with shreds of lettuce, sliced radishes, sliced avocado. I also like to top mine with a Tablespoon of low sodium ranch dressing, and sometimes a splash of cider vinegar.
Chick peas (also known as Garbanzo beans) are a good source of protein.

18 In every thing give thanks: for this is the will of God in Christ Jesus concerning you.
19 Quench not the Spirit.
20 Despise not prophesyings.
21 Prove all things; hold fast that which is good.
22 Abstain from all appearance of evil.
23 And the very God of peace sanctify you wholly; and I pray God your whole spirit and soul and body be preserved blameless unto the coming of our Lord Jesus Christ.
24 Faithful is he that calleth you, who also will do it.

27 I charge you by the Lord that this epistle be read unto all the holy brethren.
