Food For Thought: Jackfruit tacos with pinto beans
Hello Everyone
God bless you this day.
Today's meat alternative meal includes an interesting food item called "jackfruit". I had never heard of it until about 3 years ago. It is a fruit that grows in the jackfruit tree in rain forests of India and a few other places. Apparently it is the largest fruit that grows in trees. The cool thing is, the fruit is often used as a meat alternative and flavored with savory herbs and spices. The end result has a taste and texture similar to shredded pork.
While the fruit can be seasoned to be a meat replacement, it is not a good source of protein. However, if you serve it with other foods that are good sources of protein, it can be part of a well-balanced meal.
In the last month, we have eaten Tex-Mex seasoned jackfruit by The Jackfruit Company. We have eaten it twice as the filler for tacos, and served it with pinto beans (protein). We really enjoyed it.

47 Verily I say unto you, That he shall make him ruler over all his goods.
48 But and if that evil servant shall say in his heart, My lord delayeth his coming;
49 And shall begin to smite his fellowservants, and to eat and drink with the drunken;
50 The lord of that servant shall come in a day when he looketh not for him, and in an hour that he is not aware of,
51 And shall cut him asunder, and appoint him his portion with the hypocrites: there shall be weeping and gnashing of teeth.
