Mama's Zucchini Walnut Bread
This is a heavy, yummy sweetbread. It must be healthy...it has zucchini in it!
Ingredients:
1 cup walnuts (chopped)
4 eggs (or egg substitute)
2 cups white sugar
1 cup vegetable oil (I use canola)
3 1/2 cups unsifted flour
1 cup raisens
1 teaspoon vanilla extract
1 1/2 teaspoon baking soda
1 1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3/4 teaspoon baking powder
2 cups grated unpeeled zucchini
Beat eggs, gradually beat in sugar, then oil.
Combine dry ingredients. Add to first mixture alternately with zucchini.
Stir in raisens, walnuts and vanilla.
Pour into 2 large (9 x 5 x 3) greased and floured loaf pans.
Bake at 350 Farenheit for @ 55 minutes or until loaves test done (toothpick comes out clean)
Remove from oven and let stand about 10 minutes. Turn out onto wire racks and cool.
Freezes well and could be glazed if desired.
May make small loaves. Bake for about 40 to 45 min.
