Peach cobbler muffins
Even though i have cook books, don't use them as much anymore, cause i use the web to look up recipes now. Found this recipe and it really good.
Peaches are in season and can be found more cheaply, just need about 4 fresh peaches and can make up to a 8 to a dozen muffins depending on size of muffin you prefer.
PEACH COBBLER MUFFINS
1 egg
1/2 c sour cream
1/2 c milk
1 tsp vanilla
4 tbsp oil or marigane (melted)
1 lg. can sliced peaches, drained and diced (can use 3 to 4 fresh peaches, peeled and diced)
2 c self-rising flour
1/2 c sugar
1/4 tsp salt
TOPPING:
1/4 c all-purpose flour
1/4 c sugar
1/3 tsp cinnamon
2 tbsp butter
Preheat oven to 400 degrees. Grease 8 muffin cups. In bowl, combine egg, sour cream, milk, vanilla and oil. Stir in peaches. In a large bowl, combine flour, sugar, and salt. Pour into the peach mixture and stir until moistened. Fill muffin cups. Prepare topping using a pastry blender. Sprinkle the topping over muffin batter. Bake for 30 to 35 minutes.

Wow, these sound yummy.
Thanks for sharing. I love fresh peaches, and sadly their season is very short. I try to use peaches in lots of different ways when they are in season. Gonna add this recipe to the mix.
