Turkey Casserole

With the hot weather upon us, I have spent many hours watching the Food Channel. The following, with some changes, came from their.

TURKEY CASSEROLE

2 eggs 2 TBLSP milk
1/2 cup feta cheese, cubed 1/4 cup sun-dried tomatoes
Salt and pepper 1/2 cup bread crumbs
Small amount chopped parsley

1 pound ground turkey (dark meat is best)

Spray bread pan, 5 X 9-inch size, to prevent sticking.

Mix all the ingredients well, except turkey. Then add turkey. Turn into bread pan smooth top.

Cook in 375 degree oven for 45 minutes.

You knew there would be a substitution, didn't you? If you don't have the sun-dried tomatoes, you can use 3/4 cup canned tomatoes, drained. My daughter suggested adding a little finely chopped sweet bell pepper.
