Banoffee Pie Recipe

Banoffee Pie

For an 8 inch clip form cake tin:
Small packet of digestive biscuits
¾ lb of butter
¼ lb of sugar
Small tin of condensed milk
2-3 bananas
1 pint of whipping cream
Small bar of milk or plain chocolate
a teaspoon of cinnamon

Line the base and the sides of the tin with grease-proof paper (stick on with a little rub of butter).

Crush enough digestive biscuits to form a ¼ inch layer at the base of the tin. Stir an a ¼ lb of melted butter and the cinnamon. When the crumbs are lightly coated, press them down (but not to firmly) into the cake tin and put it in the fridge to harden.

On the stove, melt the rest of the butter and the sugar together. Add the condensed milk and start to stir. Make sure all the kids are standing well back, this stuff is like napalm! Keep stirring for about 5 minutes trying not to let the mixture stick to the pan (this is hard, you will get some dark bits). When the mixture is a gloopy caramel colour take it off the heat.

Take out the base and cover the bottom with sliced banana. Pour in the hot caramel and set aside until cool and set.

Whip the cream until you get stiff peaks, then top the caramel & bananas with it.

Grate the chocolate over the top of the cream.

Unclip the tin and peel away the paper. Cut it into wedges like a cake and serve.


***A graham cracker crust can be substitued for the digestives***

thanks for sharing ur recipe kimby.

From the name I thought it might have coffee in it rofl but chocolate is close enough :) sounds yummo.

actually one fo the recipes did have just a touch....but I think the "offee" part comes from the fact that a lot of times caramel here is referred to as toffee.
